Pumpkin Bread:
Do you only make or enjoy pumpkin bread during the fall or winter months, or only for special holidays? I don't know about you, but in our home fresh baked pumpkin bread is enjoyed all year round. Pumpkin bread goes back to the Native Americans over 9,000 years ago, who grew pumpkins and it became a staple food for them. Pumpkin bread as we know it today has been around for hundreds of years. The spices used to make this bread have a delicious aroma that fills the house when it's baking. I have made so many different versions of this bread and each one has been delicious. Feel free to experiment and add ingredients such as chocolate chips or nuts to the mix or as a topping. However you decide to make it, I am sure you will love it. Now let's bake!

Ingredients:
- 1/4 cup sugar
-1/4 cup ground cinnamon
Optional Toppings:
- chopped nuts (any kind)
- chocolate chips
Instructions:
1. Preheat the oven to 350 degrees. Make sure the oven rack is in the center position.
2. Spray an 8.5x4.5 loaf pan generously with cooking spray.
3. Mix all ingredients in a large bowl or use a stand mixer.
4. Bake in preheated oven for approximately 70 minutes. If baked properly, the top will be nicely browned and the center will be moist, not dry. If it is still wet after 70 minutes, bake for an additional 5 to 10 minutes, but do not overcook.
5. Remove it from the oven and let it cool before serving. Enjoy with your favorite hot drink!
