Banana Bread:
Banana bread is my go to recipe when I need to bake a delicious sweet treat quickly. I have been making this recipe for over 15 years and my family has never grown tired of it, they love it. The best part of this bread is that you can add additional ingredients to make it even richer. I like to add chocolate chips, butterscotch chips, walnuts, pecans, raisins and cranberries, just to name a few. I also like to add the cinnamon sugar topping for that extra sweet taste. You can also make muffins or mini bread loaves from this recipe. So, from now on whenever you have any over ripe bananas, make this bread or freeze the bananas for future use. Now let's bake!

Ingredients:
Topping:
- 1/4 cup sugar
-1/4 cup ground cinnamon
Optional Toppings:
- chopped nuts (any kind)
- chocolate chips
Instructions:
1. Preheat the oven to 350 degrees. Make sure the oven rack is in the center position.
2. Spray an 8.5x4.5 loaf pan generously with cooking spray. You can also use an 8x8 square pan, muffin tin, or mini loaf pans if you prefer.
3. Mash the 3 bananas and put to the side.
4. In a large bowl mix the softened butter and 3/4 cup of sugar. Beat in the egg and mashed bananas. Mix in the flour, baking soda and salt. Pour the mix into the loaf pan.
5. Mix the 1/4 cup sugar and 1/4 ground cinnamon and sprinkle evenly over the mixture. If you are going to add additional toppings you can do so after you sprinkle the cinnamon and sugar on it.
6. Bake in preheated oven for 1 hour (approximately 55 minutes). If baked properly, the top will be nicely browned and crisp and the center will be chewy, not dry.
7. Remove it from oven and let cool before serving.
