Chicken salad is a dish you can serve anywhere at anytime. It's perfect for lunch, barbecues, picnics, pot lucks, or just as a snack. You can make this recipe in just 5 minutes. If you enjoy eating healthy, simply add light or fat free mayo and enjoy this on a salad, or by itself, either way it's delicious. I prefer to use either rotisserie chicken, baked thighs, or baked breast that have already been seasoned and cooked. I usually use the leftover chicken from dinner and make this as a quick lunch for the next day. You can also substitute chicken for turkey, especially around the holidays when you have leftover meat.
