Cheesy Chicken Enchiladas:
An enchilada is a popular Mexican dish. It is one of the most popular dishes that could be bought from a street vendor in Mexico and is known as "street food." The term “enchilada” simply means ”dipped in chili." Originally, an enchilada was made from a tortilla dipped in chili sauce and stuffed with cheese and beans or chicken and beef, sometimes with spinach. This recipe is a version of the Enchiladas Suizas because it uses sour cream and cheese in the sauce. My family enjoys having this dish because it can also be made with ground beef or turkey, shredded steak, shrimp, fish and even vegetarian style made with refried beans or vegetables. This dish can also be served with a number of side dishes such as Spanish rice, green salad, refried beans, black beans, sour cream, salsa, and guacamole. Ingredients:
- 4 cups of cooked chicken breast – shredded or cubed
- 1 tablespoon chili powder (optional)
- 1/2 teaspoon garlic salt
- 1 teaspoon ground cumin (optional)
- 10–12 flour tortillas (10 inches)
- SAUCE Ingredients:
- 2 tablespoons all-purpose flour
- 1&1/2 cups chicken broth
- 1&1/2 cups (12 oz.) sour cream (can use reduced fat or fat free)
- 3 cups shredded Mexican cheese blend (can use cheddar or colby jack) Use 1 cup of the cheese for the sauce, 1 cup to add to tortilla and chicken filling and 1 cup as a final topping before baking
- Optional fillings:
- rice
- refried beans
- diced tomatoes
- avocado
- green onion
- jalapeño
- Preheat oven to 350 degrees. Grease a 13x9 in baking dish with cooking spray (you may need to use 2 baking dishes).
- In a large bowl, combine the cooked chicken, chili powder, garlic salt and cumin (I prefer to season the chicken before cooking it).
- Place 1/3 cup chicken mixture down the center of each tortilla and top with a little shredded cheese .
- Fold the ends of the tortilla in, then roll it up and place seam side down in the 13-in. x 9-in. baking dish.
- On the stove on medium heat, in a medium saucepan, whisk the flour and broth until smooth.
- Bring it to a boil, and cook for about 2 minutes.
- Remove from heat, and let it cool off for a few minutes before adding the sour cream (if not the mixture will curdle).
- Stir in the sour cream and 1 cup of the cheese – stir until cheese is melted.
- Pour the sauce over the enchiladas.
- Sprinkle the rest of the shredded cheese on top.
- Bake, at 350° for 15-20 minutes or until it the cheese melts and gets bubbly.
- Remove from the oven and cool for about 5 minutes.
- Top with your choice of toppings (listed above). Enjoy!
