Ingredients:
- 3/4 cup old fashioned oats
- 2 eggs
- 2 ripe bananas (can also use frozen and thawed bananas)
- 1 1/2 teaspoons cinnamon
- 1 teaspoon vanilla
- 1 teaspoon honey (optional)
Optional Toppings:
- Maple syrup (or your favorite syrup)
- Powdered sugar
- Berries (your favorite)
- Bananas
- Chocolate Chips
- Chopped walnuts or pecans
Instructions:
- Place a griddle or pan on the stove over medium-low heat (make sure to preheat your pan or your first batch of pancakes won’t have that nice golden color).
- In a bowl add oats, bananas, eggs, cinnamon, and vanilla. Don’t over blend it - just enough to make the batter nice and smooth.
- Lightly grease the pan with cooking spray or butter (if using butter, don’t use too much or the pancakes will look blotchy and will not get the smooth golden color).
- Pour the batter on the griddle in small circles. I find that a quarter cup makes a perfect scoop. One quarter cup makes two silver dollar pancakes, but you can make them bigger if you prefer.
- When the batter begins to bubble and the bottom is golden (usually around 2-3 minutes), flip the pancakes.
- Cook for another 1-2 minutes until golden.
- Serve with your favorite topping. Enjoy!
Notes:
- You can sub maple syrup for vanilla.
- Feel free to mix blueberries or chopped strawberries into the batter.
- You can use a food processor or blender to make the oats into a flour like consistency before making the batter, but it is not necessary.
