Ingredients:
- 3 tablespoons of oil (vegetable, corn, canola)
- 1 lb. longaniza, cut into 1-inch links
- 1 cube of chicken bouillon (can also use the packet)
- 1 teaspoon oregano
- 1 pack Goya sazon (culantro y achiote - optional)
- 3 tablespoons of sofrito (can buy it or make it - recipe below)
- 1/4 cup tomato sauce
- 1/4 cup Spanish olives with capers (can cut in halves)
- 4 cups of water
- 3 cups of white rice, rinsed and drained
Instructions:
- In a large pot, heat oil over medium heat. Saute longaniza until cooked and slightly crispy. Remove from the pot and set aside.
- Remove excess oil from the pot. Add chicken bouillon cube, oregano, sazón, and cook for about 45 seconds. Stir in sofrito, tomato sauce, and olives. Cook for about 2-3 minutes.
- Add the 4 cups of water. When the water begins to boil, add the rice, stirring occasionally to prevent sticking to the bottom of the pot.
- Once the water has evaporated, add the longaniza back into the pot and stir to combine. Lower the heat to low. Cover and let cook for 25 minutes. After 25 minutes, stir the rice carefully and cover for an additional 5 minutes.
- When cooked, the rice should be tender and not mushy.
- Serve warm with your favorite side: salad, avocado, potato tostones, etc.

- 1 clove of garlic
- about 3-4 tablespoons of cilantro
