Churro Cheesecake Bars:
Who can resist cinnamon, cheesecake, or churros? I know I can’t! This dessert has the best of all of those flavors combined. It’s crunchy from the cinnamon sugar and sweet from the cream cheese filling, the best of both worlds. Churros are long pieces of fried dough coated with cinnamon and sugar and are a street food found in Spanish and Latin American cuisines. They can be filled with caramel, chocolate or other flavored sauces. These can be filled with not only cream cheese, but your favorite flavor jam. This has become one of the go to desserts for my family and they love it. The first time I made this dessert for my family, they thought it would not taste just like a churro. Well, I proved them wrong, it tastes just like a churro, but better. Keep in mind that the dough may get sticky quickly, other than that the recipe is very easy to follow. Instructions:
1. Combine 1/2 cup sugar and 2 Tbsp cinnamon in a small bowl. Set aside. You will need to use this for the bottom of the pan and the topping.
2. Using a whisk or hand mixer, beat the cream cheese until smooth.
3. Add the sugar, egg, and vanilla and beat until smooth and creamy. Set aside.
4. Spray a 9x13 pan with non-stick spray, then sprinkle half of the cinnamon sugar mixture evenly on the bottom of the pan.
5. Unroll the dough onto a lightly floured piece of waxed paper and press all the seams together. Carefully lift into the pan on top of the cinnamon sugar. Press to the edges of the pan. The dough may get sticky quickly so make sure to use enough flour on the waxed paper.
6. Spread the cream cheese mixture evenly over the dough. If you are going to add any jam filling, you would add it now on top of the cream cheese mixture.
7. Unroll the second can of dough and roll it out the same way as the first one. Place it on top of the filling.
8. Sprinkle the remaining cinnamon sugar on top of the dough. Bake at 350 degrees for about 25-30 minutes or until light brown on the top.
9. Remove from the oven and let cool for at least 10-15 minutes before you cut them. You should get 24 bars when done. Enjoy!
