Spinach & Artichoke Dip:
I love dips, especially ones you can eat either hot or cold. This recipe is perfect for those who are following a low carb or keto diet. Dips are the perfect go to dish for barbecues, parties and family dinner nights in place of big meals. My family has a light dinner on Friday or Saturday nights, so recipes like this are perfect. The first time we ate this dip was out at a restaurant and we all loved it. The combination of the mozzarella, parmesan, and cream cheese is rich, creamy, and delicious. If you don't have frozen spinach, you can use fresh spinach, but make sure to steam it and blanch in ice water, then squeeze all the excess liquid and chop it up. If you are lucky enough to have leftovers, you can reheat it in the microwave. If you want to make this recipe a little lighter in calories, you can use light cream cheese, sour cream, and mayo. Also, I use extra cheese as a topping before baking because everyone in my family loves cheese, so why not? Give this appetizer a try, and I know you will love it. Now, let's cook!
