Turkey & Black Bean Chili:
The history of chili, or chili con carne, has always been a topic of debate, but no matter what the history is, it has definitely become a staple in many households and an All American dish. This dish has become known as a comfort food, especially made during the colder winter months of the year. The wonderful thing about this recipe is that is can be made with ground beef, ground turkey, red beans, black beans, or no beans. This is a one pot dish that you can tailor to your taste. This dish is also an excellent source of protein and if you make it with beans you have an additional second source of protein. My family loves this dish so much that I make it all year round. We enjoy it served alone or over pasta or rice. I usually serve it with a side of creamy corn bread (recipe is listed under "Breads"). Ingredients:
- 2 tablespoons extra-virgin olive oil
- 1 pound lean ground turkey (or ground beef if preferred)
- Salt (to your taste)
- Ground pepper (to your taste)
- 3 garlic cloves, minced
- 1 medium onion, finely chopped
- 2 tablespoons chili powder (more or less to your taste)
- 1 teaspoon ground cumin
- 1 cup of water
- One 14-ounce can chopped tomatoes (or petite diced tomatoes)
- One 15-ounce can tomato sauce
- One 15-ounce can black beans, drained and rinsed (can use red beans if preferred)
- diced red peppers
- diced green peppers
- jalapeños
- diced carrots
- In a saucepan over medium heat, heat the olive oil.
- Add the garlic and onion. Saute for about 1 minute.
- Add the ground turkey (or beef). Season with salt and pepper to your taste.
- Cook over moderate heat, breaking up the meat (to keep it from clumping together) until white throughout, about 4 minutes.
- Add the chili powder and the cumin. Stir until fragrant, about 5 minutes.
- Stir in the tomatoes, tomato sauce and 1 cup of water. Bring to a simmer. Set heat to low and cover.
- Cook over low heat, stirring occasionally, until thickened, about 30 minutes (let simmer a few extra minutes if it needs to thicken more).
- Add the beans and simmer for about 15 minutes.
- Turn off the stove. Leave covered until ready to serve.
- Serve over your favorite sides such as pasta, rice, tortillas or enjoy alone.
- Top with your favorites such as shredded cheese, sour cream, corn bread, or jalapeño peppers. Enjoy!
