Graham Cracker Pudding Dessert:
This dessert combines the best of two worlds, cookies and pudding, these are two of any child’s (and adult’s) favorite treats. This dish has become a staple in our house, we serve it at every holiday, party, barbecue, and family get together. All of my children, nieces, and nephews have grown up eating this in my home and to this day they still request it. I learned how to make this dessert from my mother in law, who is Portuguese. This is a dessert made in Portugal, but they use ladyfingers instead of graham crackers. You can also use chocolate graham crackers or chocolate Maria cookies with chocolate pudding instead. My mother in law always made this dessert for my kids when they were growing up, so naturally I learned how to make it because they loved it then and still do. Now my entire extended family and friends enjoy it. It is a recipe that serves at least 8 people, so it is perfect for any gathering. It is so easy to make because it only requires 4 ingredients. For best results I recommend refrigerating it overnight, this will give the cookies an opportunity to absorb the mixture and become softer. So quick and delicious. Now, let's cook!

Ingredients:
- 1 small box instant vanilla pudding (can use chocolate if you prefer)
- 2 cups milk (can use a milk substitute)
- 1 regular size container cool whip, thawed
- 1 package of graham crackers (can use ladyfingers or Maria Cookies)
- 9 x 13-inch pan
- 1-2 cookies, crushed (can also use graham cracker crumbs)
- Strawberries
- Blueberries
- Kiwi
- Blackberries
Instructions:
- Combine milk with the pudding mix in a bowl. Beat with an electric mixer or a whisk for 2 minutes, or until thoroughly blended.
- Add the cool whip to the pudding mix and whisk until thoroughly blended. Set to the side.
- In a 9 x 13-inch pan, arrange a layer of cookies flat sides down, and then top with a layer of pudding mixture. Spread it with a spatula. Continue alternating layers until all of the cookies and pudding mixture are in the dish. (Like a lasagna).
- Top the dish with the pudding mix. Spread it evenly with a spatula.
- Take 1-2 cookies and crush them. Sprinkle them lightly on top of the pudding mix. If you are going to add fruit, add it now as a topping.
- Cover and refrigerate at least 2-3 hours. This dessert tastes better when refrigerated overnight but can be served the same day. Enjoy!
