Chickpea salad is a perfect dish for any gathering. It is a favorite in my family and we enjoy eating it all year round. This salad is perfect if you are following a vegetarian, vegan, or plant based diet. The chickpeas are full of protein and the fresh veggies really bring this dish together. Don't be scared to use canned chickpeas, they can be your best friend, especially if you have to put together a dish last minute. Also, if you prefer to use vinaigrette dressing instead of the lemon juice and olive oil, the salad will still taste just as delicious. I love to add feta cheese to my salad, but for those of you who follow a vegan diet, not adding the feta will in no way minimize the delicious flavor of this dish. You can also substitute it with a vegan cheese you like. Enjoy! Now, let's cook!

- 1/4 cup red onion, diced (more or less to your taste)

- 1 green or red bell pepper, diced
